Separate tax groups, with every item assigned to one of them. In Little Rock, prepared food carries a combined rate of 10.625% while mixed drinks carry 32.625%. The 2% Little Rock hospitality tax hits prepared food and skips mixed drinks, so one blanket rate across the menu rings half your check wrong every night you are open.
Fayetteville plays by its own rules. Prepared food there runs 11.75%, and the city adds a 5% supplemental beverage tax on spirits while excluding wine, beer and malt beverages under 5% ABW. A card sits behind the bar for three hours. What is the system doing?
The bartender swipes or dips to open the tab, and the system runs a pre authorization to confirm the card is good. The tab lands on a list by guest name or card name, and any bartender working that station can add to it. Quick keys keep a repeat round down to one or two taps, which is what keeps the rail moving at eleven o'clock.
Pre authorization holds expire. A hold that has aged out on a card that later declines is your loss, and the bank will not argue the point with you. SkyTab and Clover both need a closing routine that clears every open tab each night. We write that routine with your closing manager during install instead of leaving it to whoever happens to be on.
What about the tabs nobody closed at two in the morning?
They sit open until a human does something. Both platforms will auto close open tabs with a set gratuity at end of day, and both will print a list of everything still hanging before the drawer report runs. Print that list every night. No other page of paper in a bar earns its ink like that one does.
Neither platform chases the guest for you. A card that fails on a tab closed the next morning becomes a chargeback conversation you usually lose, and your card fees already cost you more each month than the software ever will. Bars that keep this number small do it with a hard rule at last call, not with a setting.

Can it run bottle service, table minimums and a cover charge?
Bottle service, partly. You build it as items with mixers attached and a server assigned, and you track a table minimum as a check target somebody watches. The build works. Call it a workaround, because a workaround is what it is, and it holds only as long as whoever runs the floor stays disciplined.
The door is the real hole. Neither SkyTab nor Clover has a door module, so no headcount, no guest list, no reentry stamps. Arkansas clubs mostly ring cover as a plain item on a door terminal and count heads on a clicker. If the door carries a serious share of your revenue, budget for a second tool and stop expecting the point of sale to cover it.

Will the system tax a check with food and a cocktail on it correctly?
Yes, once the tax groups exist. Every item belongs to a group and each line calculates at its own rate. A single flat tax rate is exactly how an Arkansas bar ends up short. We build the groups against your city and your permit, then ring test checks with mixed items before install day.
What happens if my internet drops on a Saturday night?
Tabs and orders keep running across the local network. Card capture switches to an offline mode with a cap on how much can be held, and declines show up after the guest is long gone. A bar carries more exposure here than a dining room does, so we set that cap with you sitting there, not for you.
Can bartenders share tabs, or does each one own her own?
Both models work. Shared tabs let anyone on the station drop a round on a check, which is faster on a packed night and weaker on accountability, especially at shift change when a tab passes from one bartender to the next. Assigned tabs tie every check to one person for cash handling. Clover leans toward assigned ownership and takes more configuration before a truly shared bar runs clean.
